The Fine Wine Reserve welcomed Jerome Legras of Legras et Hass, who guided members through his wines, and was available to answer any questions posed from our guests. Jerome is even rumoured to be able to sabre a bottle of champagne with anything... including a champagne flute!?

The Legras & Haas family has been producing wine for seven generations. The first few acres, of the current family domaine were purchased over two hundred years ago. These vineyards include some of the most highly regarded terroirs in Champagne.
Today Legras & Haas is lucky enough to own vineyards in both the Côte des Blancs and in the Aube. The Côte des Blancs vineyards are regarded as among the very best Chardonnay producing vineyards in Champagne. In addition, the Aube is reputed to be among the very best Pinot Noir producing vineyards in Champagne. This diversity of terroir not only helps them to remain independent, but it also helps to insure the quality of their wines from year to year. In addition, this exceptional palette of terroir allows them to make very complex and expressive wines. At the age of 13 François Legas began working with his father Lucien in the vines. Now, François and Brigittes sons Remi and Olivier have joined them at the winery. The family has a great deal of respect for Champagne & Champagne Grand Cru.
Only hand selected grapes are used for first juices only. A natural settling of juices is required for 12 to 24 hours. Low temperature fermentation is also required between 17 and 18C to preserve the finest aromas. Each wine is sorted by variety and plot and then tasted and blended by family members ONLY from December until bottling in April. Yeast is also left in the bottle to help in the aging process before it is disgorged. Minimum 3 years aging.
Tradition NV Tasting Notes: The shiny pale gold colour with good mousse has a fine nose which follows through to a silky texture and taste. This elegant Champagne offers subtle flavors of apple and pear tart, anise and candied lemon zest, with a hint of brioche. This Champagne is fresh and firm with a smooth silky texture and a smoky, mineral finish. Legras et Haas Brut Tradition is an ideal "all occasion" Champagne. This Champagne brings an immediate smile to the lips. Wine Spectator 92 Points.
